While visiting Sea Island with Christina and her family, I was lucky enough to get to watch Christina make (and EAT) her yummy Raw Berry Pie. Okay, this pie is amazing, so expect to eat more than one piece, but if you have more willpower than I do, it’s a suitable freezer item for storage for those sweet cravings with that Superfood edge. These can also be made as individual servings in cupcake tins or ice cube trays for bit sizes. So healthy and palette cleansing. Enjoy!
Note: We used a Vitamix to make this one since we didn’t have a food processor, which would be a little easier for the crust. We also used a new brand we found at the local health food store, Sunfood!
Another Note: Prepare nuts by soaking prior to use.
CRUST:
1 CUP mixed organic Pecans, Walnuts, Almonds and Rolled Oats
1 Tbsp. Organic Maca Powder
1 Tbsp. Organic Raw Cocoa
2 Tbsp. Organic Coconut Sugar
2 Tbsp. Organic Chia Seeds
1/2 Tsp. Cinnamon
1/2 Cup Organic Dates or Raisins
Keeping it on low speed, blend until dry crumbly. When it gets to this consistency, then add 4 Tbsp. melted coconut oil to the mix and smoosh it all evenly into your pie plate 🙂 Go ahead and stick it in the fridge until we are ready for it.
FILLING:
1 Cup soaked organic cashews
2 Cups mixed berries (We used organic frozen mixed berries)
10 Drops Stevia
2 Tsp. Xylitol
3/4 Cup Organic Coconut Oil
Blend it all, and fill your crust! Sprinkle with Raw Cocoa Nibs. Refrigerate to set.
